„NEUNKRÄUTER“ Soup

The 9-herb soup dates back to an ancient tradition, as the first fresh green herbs of the year have always been considered medicinal and promise year-round health. It was once used to chase away winter and welcome spring, later became known as the Maundy Thursday soup, symbolizing renewal and vitaliy.
Ingredients (4 Pl):
2 onions
4 handful of 9 different herbs.
Take what you find around you in the wild nature or in your garden:
Chives, lovage, parsley.
Wild herbs: Greedy=goutweed=ground elder=wild parsley, dandelion, chickweed, ribwort plantain, yarrow, wild garlic, bugleweed, watercress, celandine, daisies...
Only take edible plants you can 100% identify!
4 radishes or 2 slices of bread for garnish
1 tbl olive oil
1,5 lt Water
3 potato
125 ml cream
herbsalt
pepper
olive oil
preparation:
- 1. First, finely chop the onion.
- 2. Roughly chop a selection of nine different herbs.
- 3. Finely chop the radishes for garnish oder frie the bread cubes.
- 4. Peel and dice the potatoes.
- 5. Sauté the finely chopped onion in oil, add water, and cook the diced potatoes until soft.
- 6. After a few minutes, add the herbs.
- 7. Simmer the soup for another 4 to 5 minutes.
- 8. Purée the soup and top with the cream, then season with salt and pepper.
- 9. Ladle the soup into bowls and garnish with olive oil, radishes or fried bread cubes.
- Fresh bread go well with the soup as a side dish.
